Distillation
Most Irish whiskeys are triple-distilled (like Jameson), resulting in a smoother, lighter spirit. Most Scotch is double-distilled, retaining more character and complexity.
Peat
Scotch — especially Islay expressions like Lagavulin — is often heavily peated. Irish whiskey is almost never peated, making it smoother and sweeter.
